I spent a couple of weeks in Prince George last year for a training course, and food became a big part of how I made the stay enjoyable. At first, I kept hitting up chain spots just out of convenience, but after day three I was over it. I started asking locals and checking around online. That’s how I found a few cool places that weren’t on my radar at all. For example, there’s a little spot on 4th Ave that does these wild fusion tacos — like Korean beef one day, smoked salmon the next. Honestly, it felt more like something you'd find in East Van than in a smaller city. I also learned to keep a backup list on hand. They may not have flashy signs, but the food usually has heart.

Sometimes I think the best decisions come from not knowing what to expect. Like when you're in a new place and don't have a plan — you just follow a smell or a lit-up window, and it takes you somewhere unexpected. There’s something about not looking everything up that makes it feel more real.
